One teaspoon of ground cumin
Sea salt and freshly ground black pepper, to taste
Optional toppings: shredded vegan cheese, salsa, avocado, sour cream, and fresh cilantro leaves.
Instructions: Preheat oven to 350 degrees F (175 degrees C). Combine black beans, quinoa, onion, garlic, chilli powder and cumin in a large bowl. Season with salt and pepper, if desired.
Fold in any optional toppings—scoop mixture into 12 bowls. Bake for 20 minutes in the preheated oven or until heated through.
